Regardless of how you prefer to doctor your oysters, learn about the aquaculture of oysters from Dr. Bill Walton of the Virginia Institue of Marine Science, aka Dr. Oyster (Bio and Instagram). The method of ‘off-bottom oyster farming’ is revolutionary in the industry. While producing world-class oysters, this technique also improves the environment along our southern coastline. Who knew you could farm your oysters while improving the environment at the same time?
